Quinoa salade with fresh fava beans

The advice : Prepare fava bean in the last minute, it will taste better.
Seasons are given for information only. Some fruits and vegetables can often extend their seasonality, depending on varietals and localities, inquire.
- Olive oil
- Salt and pepper
- 1 fistful of walnut
- 2 or 3 branches of mint
- 1/8 lbs of quinoa
- 1.8 lbs of fava beans
- Cook the quinoa in a saucepan with boiling water for 15 minutes.
- Rinse the quinoa with cold water.
- Peel the fava beans and if necessary (it taste better), peel also the second part of the beans.
- Chop finely the mint.
- In a bowl, mix all the ingredients and dress with olive oil, salt and pepper.
