How to replace basic ingredient by others?
1/4 lbs of flour
It depends on the recipe, if it's sugary, salty...
- 1/5 lbs of rice flour + 1/16 lbs of starch
- 1/8 lbs of white flour + 1/8 lbs of starch
- 1/8 lbs of white flour + 1/8 lbs of almond powder
- 1/4 lbs of blended oatmeal + 2 teaspoons of backing powder
- 1/8 lbs of flour + 1/8 lbs of corn/rice/rye flour
1/4 lbs white sugar
If you replace sugar by honey or syrup, consider removing a fex liquid ingredients (oil, milk...)
- 1/4 lbs brown sugar
- 1/4 lbs iced sugar
- 1/5 cup of honey
- 1/5 cup of agave syrup
- 1/4 lbs mapple syrup
1/4 lbs of chocolate
You will have a mix with more cocoa, but that's pretty good!
- 2/5 cup of cocoa + 2 tablespoons of oil (sunflower/nuts...)
40 g of fresh yeast (1 cube)
Consider rehydrating the dehydrated yeast
- 14 g of dehydrated yeast
Milk
Choose your milk depending on the recipe: almond, hazelnut, pistachio for suagry recipes for example

Liquid cream
Chose the cream depending on the recipe : some cream will have a neutral taste, others will have a stronger taste.

For recipes with soft butter, we will choose plutot du soft tofu, avocado or yogourt, for recupes with melted butter, oils are more appropriates
- 9 cl oil (olive, sunflower, walnut, hazelnut)
- 9 cl coco oil/coco butter
- 1/8 lbs of mashed avocado
- 1/8 lbs of butter + 1/16 lbs of yogourt
- 80 g de soft tofu mixed
6 g of gelatin (3 leaves)
Agar-agar does not need to be hydrated, only boiled with the preparation
- 2 g of agar-agar (1 croped teaspoon)

When the egg is usefull for having a spongy texture (a cake for example)
- 1/2 mixed banana
- 60 g of compote (apple, pear, plum)
- 1/8 lbs of de mashed potato/carrot...
- 1/8 lbs of yogourt
- 1/5 cup of fermented milk
- 1 tablespoon of oil + 1/5 cup of milk
- 1/8 lbs of soft tofu mixed
1 egg
When the egg is usefull to bind the dough (crepes or pancakes for example)
- 1 tablespoon of starch + 2 tablespoon of water or milk
- 1/2 mixed banana
- 60 g of compote (apple, pear, plum)
- 1/8 lbs of mashed potato/carrot
- 1/8 lbs of soft tofu mixed
1 egg
When the egg is usefull to give an aerial texture (brioche for example)
- 1/8 lbs of yogourt
- 1/5 cup of fermented milk
- 1 tablespoon of vinegar or lemon juice
- 1 tablespoon of bicarbonate + 1 teaspoon of vinegar or lemon juice
1/4 lbs of ground meat
For bolognese for example
- 1/5 lbs of soya proteins rehydrated (in water or soya sauce for example)
1/4 lbs of bacon strips
