Seasons are given for information only. Some fruits and vegetables can often extend their seasonality, depending on varietals and localities, inquire.
- 1/5 cup of tomato sauce
- 3 or 4 mushrooms
- 1/8 lbs of grated cheese
- 1 big eggplant
- Cut the eggplant in 1cm thickness slices.
- Put the slices in a sheet of greaseproof paper.
- Spread tomato sauce in the slices. Add oregano.
- Wash and cut mushrooms in thin slices and add them in the tomato sauce. Sprinkle with grated cheese.
- Put eggplant pizza in the oven at 180°C/356°F for 30 minutes.
