Ingredients :

For the biscuits

  • 1 cup of ground almond
  • 1 egg white
  • A pinch of salt
  • 4/5 cup of icing sugar

For the icing

  • 1/2 cup of icing sugar
  • 1/2 white egg

Preparation :

For the biscuits

  • In a bowl, mix the ground almonds, icing sugar and salt.
  • Than, add the white egg, mix the dough until you got a "ball"
  • Cover the dough with film and put it into the fridge for 30 minutes.
  • Spread the dough to get a thickness of 2 mm on a kitchen counter with icing sugar to avoir the dough to stick.
  • Cut the dough with a pastry cutter and put biscuits in a baking tray.

For the icing

  • Mix in a bowl the white egg and the icing sugar until you got a mixture not too liquid.
  • With a brush, spread the icing in every biscuits.
  • Let the biscuits rest for 1 hour.
  • Cook the biscuits at 180°C/356°F for 10 minutes.
