Ingredients :

For the biscuits

  • 1 teaspoon of bicarbonate
  • 1 cup of soft butter
  • 1/2 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 9/10 cup of sugar
  • 2 eggs
  • 3/5 cup of muscovado sugar (very brown)
  • 3 and 2/3 cups of flour

To finish

  • 2/5 cup of sugar
  • 3 teaspoon of cinnamon

Preparation :

For the biscuits

  • In a big bowl, mix butter and sugar. We should have a creamy mix.
  • Add eggs and vanilla. Mix everything.
  • Then add the flour bit by bit (it could be toot much and not enough), and mix. We should have a smooth dough and we should be able to make some small ball.
  • Let the dough rest during 30 minutes.

To finish

  • Mix sugar and cinnamon.
  • With the dough, make some small balls (around 2 cm diameter)
  • Roll the balls into the mix of cinnamon sugar and flatten them carefully.
  • Put the biscuits in a baking sheet and put in the oven at 150°C during 15/20 minutes. Biscuits should be brown but soft inside.
