Ingredients :

  • Olive oil
  • Salt and pepper
  • 1 fistful of walnut
  • 2 or 3 branches of mint
  • 1/8 lbs of quinoa
  • 1.8 lbs of fava beans

Preparation :

  • Cook the quinoa in a saucepan with boiling water for 15 minutes.
  • Rinse the quinoa with cold water.
  • Peel the fava beans and if necessary (it taste better), peel also the second part of the beans.
  • Chop finely the mint.
  • In a bowl, mix all the ingredients and dress with olive oil, salt and pepper.
